Authentic Guacamole

When I visit Mexico, I live and breathe guac (and Pico de Gallo). Ingredients found in a classic guacamole recipe are fresh avocados, lime juice, salt & usually onion/cilantro. In Mexico, we always have a bit of tomato in our guacamole as well. The great thing about this dip is that you can vary the ingredients however you want! Add extra garlic, spice it up, add roasted peppers or corn.

How to Make Guacamole

This is the best guacamole recipe because it’s delicious and comes together in a flash. Here’s all you do:

  1. DICE: Finely dice some red onion and mince the jalapeno pepper (remove seeds for less heat, leave seeds/membrane for more heat).
  2. SEED: Seed and chop the tomato. Removing the seeds and pulp and just use the flesh, this will prevent the guacamole from being too watery.
  3. PEEL: Peel and mash the avocados with the lime juice until smooth. The lime juice keeps the guacamole from turning brown.
  4. MIX: Mix all the ingredients together, season to taste and enjoy!

How Long Does Guacamole Last?

Guacamole is a dish that really should be served fresh to be appreciated. Just like apples and raw potatoes, avocados start to turn brown pretty fast after cutting, due to an enzyme that promotes oxidation. This discoloration doesn’t mean it’s spoiled, but it can be unappetizing!

The lime juice in this easy guacamole recipe helps slow that process. It will keep in the refrigerator 1-2 days. If the surface does turn brown, after no more than a couple days, you can try scraping it off. The green layer underneath is perfectly fine.

The secret to keeping your “guac” green and fresh-looking in the refrigerator is to prevent air from hitting the surface. Plastic containers – even ones’ with tight seals – are not sufficient. I like to press a piece of clingy plastic wrap over the surface and up the sides of the bowl to create an airtight seal.

How to Freeze Guacamole

Can you freeze guacamole? Yes, you can (who knew?) but I do have to admit, it tastes best fresh. Freezing the guacamole can change the flavor/consistency a little bit but it’s great for recipes like7 Layer Dip.

If you’re freezing guac, skip the onion, tomato, etc. The veggies will get watery. Scoop it into freezer bags and squeeze out all the air to create a tight seal. When you are ready to make my simple guacamole recipe, just thaw and mix in the rest of the fresh ingredients. Adjust the seasoning and enjoy!

FAQs

What is the secret to good guacamole? ›

The perfect guacamole should be a cross between creamy and chunky. You'll want a mix of avocado chunks and creamy mashed avocado. My tip is to use a fork to mash the avocado but avoid over-mixing the first time around, this will create too much creaminess and be more like avocado puree rather than guacamole.

What do restaurants put in guacamole to keep it from turning brown? ›

DOES LEMON JUICE KEEP GUACAMOLE FROM TURNING BROWN? Yes! The lemon forms a barrier between the outside air and the guacamole to make sure the dip stays its greenest.

What is traditional guacamole made of? ›

Here's all you need for traditional guacamole: ripe avocados, coriander/cilantro, red onions, jalapeño or Serrano chilli, lime and salt. Avoid unnecessary fillers such as sour cream and cream cheese. They only dilute flavour. Popular optional extras include: garlic, tomato, cumin powder.

What makes guacamole taste good? ›

Fresh lime juice and zest – They make the guacamole zesty and bright. Jalapeño – For heat. Feel free to omit it if you're sensitive to spice. A serrano pepper would work here too!

Why you should leave the lime out of guacamole? ›

You see, lime is a very strong acidic flavor and it can easily overpower the delicate flavor of the avocado.

How far ahead can you make guacamole before it turns brown? ›

To keep fresh overnight:

Adding a thin layer of water over top of your bowl of guacamole is a great barrier against oxygen, and since guacamole is heavy, the little liquid that may seep down into the bowl will not water it down. If you use this method, your guacamole should stay fresh for up to 3 days.

When guacamole turns brown does that mean it's bad? ›

Although brown guacamole isn't the most appealing, it's completely safe to eat (as long as you've stored the guacamole in the refrigerator, and it isn't more than three days old). "While a bit off-putting to look at, brown guacamole is totally safe," confirms Food Network's nutritionist, Dana Angelo White, MS RD ATC.

How much lemon juice to keep guacamole from turning brown? ›

I simply squeezed the juice from half a lemon over the surface of the prepared guacamole. I checked for browning after one hour, one-and-a-half hours, and two hours.

Can you use lemon juice instead of lime juice in guacamole? ›

I like the flavor better with lemon juice, but lime works too. If you're out of fresh lemons or limes, try using bottled lime or lemon juice. Although, freshly squeezed juice is definitely the best! Salt: Salt enhances the flavors and brings it all together.

Does cumin belong in guacamole? ›

Fine sea salt: A critical ingredient to bring out all of those good flavors! Ground cumin: I've always added a dash to my homemade guacamole, and I'm convinced it's the secret ingredient that rounds out all of those flavors and makes people love it so much.

What are the white strings in guacamole? ›

The strings might be a bit of a nuisance, but they're harmless! So what are they, exactly? These strings are actually vascular bundles, meaning they are responsible for bringing all those nutrients and water from the tree into the fruit (yes avocado is a fruit).

How to jazz up guacamole? ›

Other seasonings and spices like paprika or cayenne can add a kick to standard guacamole. Crushed red pepper, cayenne, paprika, or even garlic powder can up the flavor in a store-bought guacamole and allow you to cater it to your own tastes.

Why is my guacamole so bland? ›

If you taste your guac and it is bland, start with more salt. Next, add lime juice.

Should guacamole have tomatoes? ›

Tomatoes are great — but not in guac.

They don't add anything other than filler. When you eat guac, what you want is creamy avocado, fresh lime, savory onion, salt, and maybe a little cilantro, if that's your thing. I'm never putting tomatoes in my guacamole and neither should you.

Why do people put sour cream in guacamole? ›

Sour cream is a simple addition to your favorite guacamole recipe. Just a few tablespoons to a small batch recipe will do it. The sour cream adds a nice tang without being too overbearing and it also creates a creamy, silky mouthfeel. A fabulous contrast to the crunch of tortilla chips.
